  • Steam Baking: Muffins

    All the Items Needed

    To get started here’s what you’ll need:

    • Stove and Fuel
    • Pot with a Cover
    • Muffin Tin (I used a cut up soda can)
    • Muffin Mix
    • Bag to Mix it in
    • Something to get the muffin Tin off the bottom of the Pot

    First Step

    Prior to going out I’d have the mix already in a zip top baggie in the amount that I’d be using on the trip.

    Add Water and Kneed till thick

    Second Step

    Add water a little at a time and knead the mix. The goal here is consistency, you’re aiming for really thick but still having all the mix dissolved.

    Third Step

    Add water to the pot. This will be your cooking medium so make sure you have enough in there.

    You’ll need to find something to put on the bottom of your pot to lift the muffin tin off the bottom.

    You also want to keep the tin away from the sides.

    I used rocks in this case.

    Fourth Step

    Pour mix into muffin tin.

    Place the tin on top of the rocks.

    Make sure that it’s pretty stable or else it could be dislodged by a heavy boil.

    Fifth Stove

    Ignite stove and let it boil. You can’t really over steam cook something so just make sure to cook it long enough.

    I’d shoot for letting it bake for about 10 minutes to start with.

    Cooking time will vary greatly with the size of the muffin tin and the amount of mix you put in it.

    A word of warning though steam baking uses A LOT OF FUEL so only do this on your expedition if fuel isn’t that big of a concern.

  • Dinner

    Okay, I had to take a break from food books(sort of, I am reading the New Whole Foods Encyclopedia, after all) because I was just on food politics/info overload, but I still wanted something to post, I’ll tell y’all what I had for dinner.

    *drum roll*

    Sweet and Sour Cabbage with Crispy Potatoes.  There, I said it.  I just used kikkoman’s sweet and sour sauce for the cabbage(with a bit of worcestershire sauce and soy sauce) and cooked the potatoes in butter on medium high heat until crispy on two sides(seasoned with salt and pepper).

    There you go, that’s what I had for dinner.

  • The Other White Meat, my Ass.

    Tonight, I ate red meat for the first time in over a year.  Specifically, a pork sausage.  I think I may regret it, but I’m hoping my IBS doesn’t have a flair up and make me suffer, as that would suck very much.  I’ve also come to the conclusion that I can no longer be a plain ol’ vegetarian.  I will resume eating white meat, from quality, local sources, but only on occasion, as I still seem to have a slight aversion to the idea of eating meat(non-fish/seafood) again.  Obviously I’m capable of it, and I have always enjoyed the taste, but for some reason, I still feel weird about it.  Oh well, we’ll see how it goes.

  • Food, INC, the book

    Alright, I finally finished reading it.  While I generally liked it, and agreed with much of it, there were a few entries that I was rather upset with.  I disagree wholeheartedly that low-fat/nonfat milk is healthier than whole milk, in fact, I believe it’s just the opposite.  Without the fat, the good stuff in the milk can’t be absorbed, and is rendered useless.  Also, a few other things caught my eye, but weren’t bothersome enough to remember.  All in all, I’d rate at a 6 out of 8.  A smooth read, where most sections are informative and friendly.  Worth a look if you care about food, but a bit repetitive if you’ve read more than 4 books on the subject(for the most part, some info is based on statistics, and brand new).  Any of the individual authors in the book are also worth checking out, some are really entertaining, and the back of Food, INC. is a great resource by it’s self.
